Here is the link to Easy Breaded Chicken Part II: www.youtube.com Here is the recipe: Ingredients: 1LB thin boneless skinless chicken breasts 1 Cup Progresso Italian Seasoning 1/4 tsp garlic powder 1/8 tsp pepper 1/8 tsp salt 2 large eggs 1/4-1/2 cup olive oil 1. Preheat oven to 400 degrees 2. Prepare Bread mixture: 1 cup bread crumbs, 1/4 tsp garlic powder, 1/8 tsp salt, 1/8 tsp pepper. Mix with spoon. Spread evenly on a plate. 3. Prepare egg mixture. Break 2 eggs onto separate plate. Add a little salt and pepper for taste. Scramble the eggs with a fork. (could add some hot sauce for a little heat). 4. Place 1/4 to 1/2 cup olive oil into a non-stick skillet. You want about 1/4 inch depth on bottom, so add oil according to the size of your pan. Start heating oil on Med-High. 5. Begin preparing meat. Dip chicken into egg mixture, let excess drip off. Then dip the chicken into the bread mixture and flip a couple of times until the chicken is fully covered. Gently shake off any excess. 6. Check oil to see if it is hot enough. Take a pinch of bread crumbs and drop into oil. If you see bubbles forming around the crumbs the oil is hot enough. 7. Start adding the chicken pieces. Lightly slide the chicken pieces in. If oil is too hot, turn it down. Let cook 1-3 minutes on each side (or until you have gotten the desired color).
